Frequently asked questions

Why isn't there one universal cups-to-grams number?

Because cups measure volume and grams measure mass, and density varies enormously by ingredient: water is 237 g per cup, all-purpose flour 120, honey 340, cocoa powder 85. Any converter giving a single answer for 'cups to grams' is quietly assuming water, wrong for nearly everything you bake with.

Why do my cups of flour weigh more than 120 g?

Scooping straight from the bag compacts flour to 140–150 g per cup, up to 25% extra, which is why cookies turn out dry and bread turns dense. The 120 g reference assumes fluffing the flour, spooning it into the cup, and leveling. Or skip the ritual: a kitchen scale removes the entire problem.

Are fluid ounces the same as ounces?

No, and this trap ruins recipes: fluid ounces measure volume, weight ounces measure mass. They coincide (roughly) only for water-like liquids. Eight fluid ounces of flour weighs about 4.2 weight-ounces. This tool labels weight ounces explicitly so the two never get crossed.

How accurate are the density figures?

They're standard baking-reference values of the King Arthur / USDA type, accurate to within a few percent for typical preparation. Real-world variance comes from packing (brown sugar is specified packed), humidity, and grind. For finicky bakes, macarons, laminated doughs, weigh with a scale; for everything else these figures are plenty.
